Oatmeal with Coconut, Chia, and Pineapple
In this tropics-inspired dish, coconut water infuses subtle flavour into the oatmeal. Each serving is topped with juicy fresh pineapple pieces and crisp coconut chips. Chia seeds, on trend as well as good for you, make an appearance here as well.

Toasted sweetened coconut chips
- Bring coconut water to boil in medium saucepan; add oats and chia seeds. Reduce heat and simmer, stirring occasionally, until oats are cooked and mixture has thickened, about 5 minutes.
- Spoon oat mixture evenly into 4 bowls. Top evenly with fruit and coconut chips.
