Fragrant, juicy cantaloupe melon and strawberries taste wonderful with ginger and honey flavoured yogurt.

Ingredients

Cantaloupe

1 medium, or Charentais melon

Strawberries

250 gm, halved

Ginger root

1 piece(s), 2.5cm (1 inch) piece fresh root, peeled and finely grated

Plain fat free yogurt

300 gm

Honey

2 tbsp(s)

Peppermint leaves

1 piece(s), fresh, to decorate

Instructions

  1. Slice melon into 4 equal pieces. Peel and slice the flesh and arrange on 4 plates with an equal amount of strawberries.
  2. Mix ginger into the yogurt with 2 tablespoons of honey. Serve with the fruit. Drizzle remaining honey over each portion and decorate with mint sprigs.
