No-Fuss Ginger-Honey Fruit Cups
1⅓ medium, or Charentais melon
250 gm, halved
1 piece(s), 2.5cm (1 inch) piece fresh root, peeled and finely grated
Plain fat free yogurt
1 piece(s), fresh, to decorate
- Slice melon into 4 equal pieces. Peel and slice the flesh and arrange on 4 plates with an equal amount of strawberries.
- Mix ginger into the yogurt with 2 tablespoons of honey. Serve with the fruit. Drizzle remaining honey over each portion and decorate with mint sprigs.
