Mojo is a sauce that originated in the Canary Islands. Ours has the traditional citrus juice, spices, and garlic, plus beer to flavor and tenderize the flank steak.

Ingredients

Beer

8 fl oz

Fresh orange juice

½ cup(s)

Chili powder

1 tbsp(s)

Ground cumin

1½ tsp(s)

Dried oregano

1 tsp(s)

Table salt

1 tsp(s)

Cayenne pepper

Uncooked lean and trimmed beef flank steak

1 pound(s), trimmed

Corn tortilla

8 item(s), warmed

Cherry tomatoes

1 cup(s), halved

Red onion

¼ cup(s), sliced, diced

Cilantro

¼ cup(s), chopped

Instructions

  1. In a 5- or 6-qt slow cooker, stir together beer, orange juice, chili powder, cumin, oregano, salt, and cayenne. Add steak, turning to coat well. Cover; cook until steak is very tender, 4 to 5 hours on High or 8 to 9 hours on Low.
  2. Transfer steak to a cutting board; cut crosswise into 4 pieces. With two forks, shred steak.
  3. Lay tortillas on a work surface. Divide steak evenly among tortillas; top with tomatoes, onion, and cilantro. Serve with hot sauce.
  4. Per serving: 2 tacos

Notes

Serving idea: Sprinkle each taco with 2 tbsp shredded reduced-fat Pepper Jack cheese.
