Pita bread makes a lighter base for individual pizzas, and these are perfectly kid-sized, ideal for those impromptu pizza party mealtimes when fun is on order, too. It's a delicious way to get in a helping of fresh veggies all sauced up and delicious.

Ingredients

Whole wheat pita

4 small

Store-bought marinara sauce

½ cup(s)

Button mushrooms

1 cup(s), thinly sliced

Baby spinach

1 cup(s), torn

Red onion

2 tbsp(s), minced

Shredded part-skim mozzarella cheese

¾ cup(s)

Instructions

  1. Preheat oven to 400°F. Place pita on a baking sheet; spread each with 2 tbsp marinara sauce. Evenly divide vegetables over top; sprinkle each with 3 tbsp cheese.
  2. Bake until cheese is melted and golden brown, 10 to 12 minutes.
  3. Serving size: 1 pizza
