Mini Raspberry Cheesecake Ice Cream Sandwiches

These mini frozen desserts combine a tangy, rich berry filling with chocolate wafer cookies. A great finish to any summer meal.
Ingredients
  • low fat cream cheese
    3 oz, softened
  • jam
    ¼ cup(s), raspberry variety
  • unsweetened frozen raspberries
    ½ cup(s), defrosted
  • lite whipped topping
    1 cup(s)
  • chocolate wafer(s)

Instructions
  1. In a medium bowl, using an electric mixer, beat together cream cheese, jam and berries until smooth. Add whipped topping; beat until just combined. Spoon 2 tablespoons raspberry mixture on top of a wafer cookie; place a second wafer on top. Set on a baking sheet and repeat with remaining ingredients; freeze until firm. Yields 1 per serving.
Notes
You can also use fresh raspberries in this recipe.Each wafer cookie is about 6 1/2 grams so we used about 5 1/2 ounces of wafers.
