Marinated Bean Salad
Enjoy this salad as a light lunch, coupled with a multi-grain roll. Or serve it as a side dish to grilled chicken or fish.
Uncooked green snap beans
1 cup(s), fresh or frozen and thawed, chopped into bite-sized pieces
Cooked lima beans
Cooked garbanzo beans
Uncooked green peas
1 cup(s), fresh or frozen and thawed
Uncooked red onion(s)
½ medium, minced
- Mix beans, peas and onion in a bowl.
- Combine remaining dressing ingredients and toss with bean mixture. Cover and put in refrigerator to marinate for at least 4 hours. Yields about 3/4 heaping cup per serving.
