Ingredients

Uncooked green snap beans

1 cup(s), fresh or frozen and thawed, chopped into bite-sized pieces

Cooked lima beans

½ cup(s)

Cooked chickpeas (garbanzo beans)

½ cup(s)

Uncooked green peas

1 cup(s), fresh or frozen and thawed

Red onion

½ medium, minced

Balsamic vinegar

¼ cup(s)

Dry mustard

½ tsp(s)

Dried basil

½ tsp(s)

Dried oregano

½ tsp(s)

Olive oil

½ tsp(s)

Table salt

¼ tsp(s)

Instructions

  1. Mix beans, peas and onion in a bowl.
  2. Combine remaining dressing ingredients and toss with bean mixture. Cover and put in refrigerator to marinate for at least 4 hours. Yields about 3/4 heaping cup per serving.
