This salsa is a wonderful accompaniment to grilled chicken or any mild fish. Be sure to use perfectly ripe mangoes.

Ingredients

Mango(es)

2 small, finely diced

Sweet red pepper(s)

1 medium, finely diced

Uncooked red onion(s)

½ medium, finely chopped

Jalapeño pepper(s)

½ medium, seeded and minced

Cilantro

1 Tbsp, chopped

Fresh lime juice

1½ Tbsp

Table salt

tsp, or to taste

Black pepper

pinch, or to taste

Instructions

  1. Combine all ingredients in a bowl. Season with salt and pepper to taste. Omit jalapeño if you do not want salsa to be spicy. Yields about 2/3 cup per serving.
