This spin on slaw has a bright lemony dressing. Matchstick-sliced apples add a touch of sweetness and counter the cabbage well.

Ingredients

Reduced calorie mayonnaise

6 tbsp(s)

Plain fat free Greek yogurt

¼ cup(s)

Lemon zest

1 tsp(s), grated

Fresh lemon juice

3 tbsp(s)

Sugar

1 tsp(s)

Table salt

½ tsp(s)

Black pepper

½ pinch, freshly ground

Packaged coleslaw mix (shredded cabbage and carrots)

2 medium, Gala suggested, cut into matchsticks

Fresh parsley

¼ cup(s), Italian-variety, chopped

Uncooked scallion(s)

2 medium, thinly sliced

Instructions

  1. In a medium bowl, combine mayonnaise, yogurt, lemon zest, lemon juice, sugar, salt and pepper. Add coleslaw mix, apples, parsley and scallions; toss to mix and coat. Cover and chill 30 minutes for flavors to blend. Yields about 2/3 cup per serving.

Notes

Chopped dill or mint, and poppy seeds would be flavourful additions to this recipe (any changes could affect Points values).
