- Combine 2 mint leaves (with stems removed), lemon juice, sugar and 1/2 cup of club soda in a blender; blend until mint is minced.
- Divide between 2 tall glasses. Add 1/3 cup of sorbet to each glass and top each with 1/2 cup of club soda. Garnish with fresh mint and serve.
