Tart and icy, this fizz provides a great pick-me-up on a hot day, as well as a jolt of vitamin C.


Ingredients
Peppermint leaves
2 piece(s), stems removed and discarded
Fresh lemon juice
⅓ cup(s)
Sugar
2 tbsp(s)
Club soda
1½ cup(s)
Sorbet
⅔ cup(s), lemon
Peppermint leaves
2 piece(s), for garnish
Instructions

Combine 2 mint leaves (with stems removed), lemon juice, sugar and 1/2 cup of club soda in a blender; blend until mint is minced.

Divide between 2 tall glasses. Add 1/3 cup of sorbet to each glass and top each with 1/2 cup of club soda. Garnish with fresh mint and serve.
