We made the classic soup-and-salad combo heartier by adding grilled chicken to the salad. Served with soup that's homemade, from the supermarket, deli or a restaurant, it’s a winning duo.

Ingredients

Fresh mixed greens

1½ cup(s)

Cucumber

¼ cup(s), sliced

Carrots

¼ cup(s), thinly sliced

Grape tomatoes

6 medium, or cherry tomatoes, halved

Italian salad dressing

1 tbsp(s)

Cooked skinless boneless chicken breast

3 oz, sliced

Parmesan cheese

2 tbsp(s), shaved

Pasta e fagioli soup, restaurant type

1 cup(s), warmed

Instructions

  1. In a medium bowl, combine the greens, cucumber, carrots, and tomatoes. Drizzle with the dressing and toss to coat; top with the chicken and cheese. Serve the salad with the soup.
  2. Serving size: about 2 cups salad and 1/2 cup soup
