Italian Cucumber Subs
Light cream cheese
3 tbsp(s), (45 ml) softened
2 tbsp(s), (30 ml) finely chopped
¼ tsp(s), (1 ml)
⅛ pinch(es), (0.5 ml) freshly ground
1 large, unpeeled, halved lengthwise
¼ cup(s), sliced, (60 ml) thinly sliced
1 oz, (28 g) sharp-variety, very thinly sliced
1 piece(s), (28 g) 16 small slices
- Combine cream cheese, basil, salt and pepper in a small bowl; set aside.
- Scrape out seeds from cucumber halves with a spoon.
- Spread cream cheese mixture thinly and evenly into hollowed out portion of cucumbers.
- Layer onion, cheese and then pepperoni on cucumber bottom; sandwich with cucumber top. Press down lightly; cut into 2 pieces.
- Serving size: 1 sub half
