Italian Chicken Sausage & Veggie Ragout

This chunky sauté pulls together in minutes and is chock full of hearty veggies. Enjoy as meal, with whole wheat pasta or on a wheat roll.


Canned chopped onions

½ cup(s), (1 small)

Cremini mushrooms

1½ cup(s)

Frozen chopped broccoli

1 cup(s), (florets only)

Minced garlic

½ tsp(s)

Red pepper flakes

¼ tsp(s), (optional)

Cooked chicken sausage

1 oz, thinly sliced

Red wine

2 fl oz

Fresh spinach

1 cup(s), packed

Grated Parmesan cheese

1 tsp(s), or pecorino cheese

Canned tomato sauce

¼ cup(s)


  1. Heat oil over medium high heat in a non-stick sauté pan. Add onion, mushroom, and broccoli and cook for 5-10 minutes, until onion is softened. Add garlic, red pepper flakes, and sausage and cook for additional minute. Add wine to pan and let reduce for 1 minute. Stir in tomato sauce and baby spinach. Cook to heat through and wilt spinach. Top with pecorino cheese and serve.


You can substitute frozen broccoli for fresh, just add it with the sausage so it doesn’t get too mushy.
