Ice cream sandwich fruit tart

This semi-homemade recipe is an easy way to create a pretty dessert that doesn’t require a lot of time—it is ready in under 10 minutes. Simply slicing an ice cream sandwich in half and topping it with colorful fresh fruit provides an easy upgrade for a sweet treat any night of the week. You can experiment with different fruit combinations, such as blueberries and raspberries or peaches and mango. Or try adding in fresh mint or basil.
Light vanilla ice cream sandwich
3 medium, hulled and halved
1 medium, thinly sliced
1 medium, peeled and diced
- Slice ice cream sandwich in half through ice cream so you have two halves, each with a chocolate bottom. Place on two plates, chocolate-sides down.
- Divide strawberries, peaches, and kiwi on top of each ice cream sandwich half and serve.
- Yields 1 half per serving.
For easier slicing, hold a sharp knife under hot running water for 30 seconds before cutting the ice cream sandwich in half.
