Preheat oven to 375°F. Thoroughly rinse 1 cup hulled barley and add to a 2-qt glass or ceramic baking dish. Add 2½ cups boiling water and ¼ tsp kosher salt. Cover tightly with foil and bake for 1 hour. Fluff with fork and serve.
