This easy sweet snack balances fresh, colourful fruit and fun Halloween candy with lightly sweetened yogurt. It’s a great make-ahead option for a Halloween gathering; you can prepare it a few days in advance and store it in the freezer until you’re ready to serve it. It’s tricky to cut when it’s frozen hard, so let it sit out at room temperature for a few minutes. If you end up with uneven pieces, know that the smaller ones are easier for little kids to manage.

Ingredients

Plain fat free Greek yogurt

Powdered sugar (confectioner's)

2 tbsp(s)

Vanilla extract

1 tsp(s)

Kiwifruit

2 medium, peeled and sliced

Clementine

2 small, seedless, peeled and chopped

Candy corn

Instructions

  1. Line a sheet pan with foil, parchment paper, or a silicone mat. In a medium bowl, stir together the yogurt, sugar, and vanilla. Using an offset spatula or back of a large spoon, spread the yogurt mixture into a 13 x 10–inch rectangle on the prepared pan. Scatter the kiwi, clementines, candy corn, and candy eyes over the yogurt. Freeze until firm, at least 1 hour.
  2. When ready to serve, remove the pan from the freezer and carefully peel the yogurt bark off the foil, parchment, or mat. Let the yogurt bark stand at room temperature for a few minutes to barely soften; cut into 16 pieces.
  3. Serving size: 1 piece (1/16th of bark)
