The combination of ginger, scallions and garlic provides an excellent base for the sauce. Serve this dish alongside your favorite grain and vegetables.

Ingredients

Cooking spray

4 spray(s)

Fresh parsley

3 tbsp(s), finely chopped

Cilantro

3 tbsp(s), finely chopped

Scallions

3 tbsp(s), finely chopped

Minced ginger

1 tbsp(s)

Garlic clove

1 clove(s), medium, minced

Water

3 tbsp(s)

Fresh lemon juice

1 tbsp(s)

Extra virgin olive oil

2 tsp(s)

Table salt

½ tsp(s), divided

Uncooked farmed salmon fillet with or without skin

4 oz, with skin (4 [5-oz] fillets)

Black pepper

¼ tsp(s)

Instructions

  1. Coat a grill rack with cooking spray. Preheat grill to medium high or prepare medium-high fire.
  2. Meanwhile, to make sauce, stir together parsley, cilantro, scallion, ginger, garlic, water, lemon juice, oil, and 1/4 tsp salt in serving dish. Set aside.
  3. Sprinkle flesh side of salmon with remaining 1/4 tsp salt and pepper. Place on grill rack and grill, turning once, until just opaque in center, about 10 minutes. Serve with sauce. Remove salmon skin before eating.
  4. Serving size: 1 salmon fillet and 3 tbsp sauce
