Letting this steak marinate overnight gives it complex, spicy flavour. There’s just enough honey to lend a touch of sweetness and form a caramelized crust as the steak cooks.

Ingredients

Canned chipotle peppers in adobo sauce

2 item(s), minced

Honey

1 tbsp(s)

Garlic

2 clove(s), large, minced

Chili powder

1½ tsp(s)

Ground coriander

1½ tsp(s)

Ground cumin

1½ tsp(s)

Table salt

1½ tsp(s)

Uncooked lean and trimmed beef flank steak

1½ pound(s)

Cooking spray

Instructions

  1. To make rub, combine chipotles en adobo, honey, garlic, chili powder, coriander, and cumin in small bowl. Rub mixture over both sides of steak. Place steak on plate; cover and refrigerate overnight or up to 24 hours.
  2. Spray grill rack with nonstick spray. Preheat grill to medium- high or prepare medium-high fire.
  3. Place steak on grill rack and grill, turning once, until instant- read thermometer inserted into side of steak registers 145°F, 10–12 minutes. Transfer to cutting board, sprinkle with salt, and let stand 5 minutes. Cut steak into thin slices.
  4. Serving size: 1/6 of steak
