Greek Chicken with Tzatziki, Orzo & Peppers

Make this dinner fast using store-bought rotisserie chicken breast and orzo that you’ve cooked in advance and reheated.


Ingredients
Olive oil
1 tsp(s), divided
Sweet mini baby bell peppers
5 pepper(s), sliced (about 1 cup)
Minced garlic
½ tsp(s)
Dried oregano
½ tsp(s)
Olives
6 medium, Kalamata, quartered
Table salt
1 pinch(es)
Cooked orzo
½ cup(s)
Lemon zest
¼ tsp(s)
Fresh lemon juice
½ tsp(s)
Cooked skinless, boneless chicken breast
4 oz, sliced
Tzatziki sauce
2 tbsp(s)
Instructions

Heat 2 ml (½ tsp) oil in nonstick skillet over medium high heat. Add peppers, garlic,and oregano; cook, stirring occasionally, until peppers are tender, about 5 minutes. Stir in olives and salt.

Toss hot orzo with lemon zest, lemon juice and remaining 1/2 tsp oil.

Spoon tzatziki over chicken; serve with orzo and peppers. Garnish with lemon if desired.
