Juicy ripe pineapple is tossed with lime, ginger and fresh mint for a super light and refreshing dessert. Also makes a terrific starter.

Ingredients

Pineapple

6 cup(s), fresh, cut into chunks

Sugar

2 tbsp(s)

Lime zest

2 tsp(s), freshly grated

Fresh lime juice

1 tbsp(s)

Ginger root

1 tsp(s), fresh, grated

Peppermint leaves

2 tbsp(s), fresh, slivered (plus extra sprigs for garnish)

Instructions

  1. In a large bowl, toss together all ingredients; refrigerate, tossing occasionally, until sugar dissolves and mixture is well-chilled, about 15 minutes.
  2. To serve, spoon 1 cup of pineapple salad into each of four glasses or dessert bowls; garnish with mint sprigs. Yields 1 cup per serving.
