Arugula has a peppery bite. If it's too strong for your taste, swap in baby spinach leaves.

Ingredients
  • 1 spray(s) olive oil cooking spray
  • 1 large egg(s)
  • 1 slice(s) light whole grain bread, toasted
  • 1 cup(s) arugula
  • 1 small fresh tomato(es), sliced
  • 1 oz prosciutto
  • 1 tsp balsamic vinegar
  • 1 pinch table salt
  • 1 pinch black pepper
Instructions

Coat a small skillet with cooking spray and heat over medium heat; cook egg sunny side-up.

Layer toast with arugula, tomato, prosciutto and egg; drizzle with vinegar (season to taste with salt and pepper - optional).
