Arugula has a peppery bite. If it's too strong for your taste, swap in baby spinach leaves.

light whole grain bread1 slice(s), toasted
fresh tomato(es)1 small, sliced
balsamic vinegar1 tsp
table salt1 pinch
black pepper1 pinch
- Coat a small skillet with cooking spray and heat over medium heat; cook egg sunny side-up.
- Layer toast with arugula, tomato, prosciutto and egg; drizzle with vinegar (season to taste with salt and pepper - optional).
