Five simple ingredients come together for an easy, family-friendly dinner that cooks itself. Make sure to choose low-sodium teriyaki sauce, as the regular variety would produce a too-salty dish.

Ingredients

Reduced sodium teriyaki sauce

¾ cup(s)

Uncooked boneless skinless chicken breast

1½ pound(s)

Broccoli

12 oz, packaged precut florets (or cut your own)

Cooked long grain brown rice

2 cup(s), frozen, precooked, warmed (or cooked from scratch)

Scallions

3 medium, thinly sliced

Instructions

  1. In a slow cooker, combine the teriyaki sauce and chicken, turning the chicken over to coat. Cover and cook until the chicken is tender, 3 to 4 hours on High or 7 to 8 hours on Low.
  2. Remove the chicken from the slow cooker and cool slightly. Stir the broccoli into the sauce in the slow cooker; cover and cook on High until crisp-tender, 45 minutes to 1 hour.
  3. Shred the chicken and stir into the broccoli mixture. Serve the chicken mixture over the rice; sprinkle with the scallions.
  4. Serving size: 1 ½ cups chicken mixture and ½ cup rice
