English muffin pizza
1 large, roasted and thoroughly rinsed
Canned tomato paste
1½ tbsp(s), (sun dried tomato paste if available)
12 large, in brine
Soft-type goat cheese
2 tsp(s), or a few sprigs of fresh thyme
½ pinch, freshly ground, black
- Preheat grill. Toast english muffins lightly.
- Tear the pepper into smaller pieces.
- Spread each english muffin with 1 tsp tomato paste or puree. Top each one with an equal amount of peppers, 3 olives and a slice of goat’s cheese. Add thyme sprigs and season with black pepper.
- Grill for 2 – 3 minutes, until cheese begins to brown and bubble. Serve at once.
