This pale green pie is ideal for your St. Patrick’s Day celebration. It’s a breeze to prepare, can be made a day or two ahead, and is sure to garner rave reviews. The flavour falls somewhere between that of a key lime pie and lime chiffon pie. Greek yogurt intensifies the fruity tang of the lime juice, and a good bit of citrus zest lends softer floral notes. To firm up the pie, be sure to freeze it; you can eat it frozen (it’s delicious that way), but we recommend letting it stand a few minutes at room temperature to slightly soften.
