Acorn squash holds its shape beautifully when cooked, so serve it in its own shell.

Ingredients

Uncooked acorn squash

2 medium

Reduced-calorie margarine

4 tsp(s)

Unpacked brown sugar

4 tsp(s)

Table salt

tsp(s), to taste

Black pepper

pinch(es), to taste

Instructions

  1. Halve each acorn squash and remove seeds. Prick flesh all over with fork. Place 1 teaspoon each of margarine and brown sugar into each half.
  2. Place squash, cut-side up, on a dish and microwave on high power for 10 minutes. Season to taste.
