⅓ cup(s), or non-dairy milk
2 large egg(s)
2 tbsp(s), optional
Robin Hood Organic Coconut Flour
2 tbsp(s), or coconut oil, for frying
- Combine wet ingredients in medium bowl. Mix in flour until no lumps remain. Add optional ingredients if desired. Mixture will thicken.
- Melt butter or coconut oil in frying pan over medium heat. Drop batter by 1/4 cup-fuls (50 mL) into hot pan. Cook until brown and bubbly. Carefully flip and continue cooking until puffy and golden, 1-2 minutes.
- Serve hot with syrup.
Optional: blueberries, shredded coconut, chocolate chips, banana slices, chopped nuts, etc. (please add Points for toppings chosen).
