Made in 15 minutes, this classic can be a mid-week breakfast and can definitely make you feel like you’re in Paris

Ingredients

Fresh tarragon

2 tbsp(s), chopped, plus extra leaves for garnish

Fresh parsley

cup(s), chopped, plus extra for garnish

Egg

4 large

Grated Parmesan cheese

2 tbsp(s)

Olive oil

2 tsp(s)

Cooking spray

3 spray(s)

Lean deli-sliced honey ham

8 oz, (8 slices)

Instructions

  1. Whisk eggs in a medium bowl until combined. Stir in parmesan, parsley and chopped tarragon. Season with salt and pepper.
  2. Heat ½ teaspoon oil in a non-stick frying pan over medium heat. Add one-quarter of the egg mixture and cook for 10 seconds. Using a spatula, draw edges of omelette into centre, allowing uncooked mixture to run underneath. Repeat until egg mixture is nearly set.
  3. Place ham in centre of omelette. Fold 1 side of omelette into centre, then fold opposite side over the top. Transfer to a plate and cover to keep warm.
  4. Repeat with remaining ingredients to make 3 more omelettes. Serve with extra tarragon and parsley.
  5. Serving size: 1 omelette
