High protein pancake mix

1½ cup(s)

Mini chocolate chips

¼ cup(s), divided

Instructions

  1. In a medium bowl, stir together the pancake mix and 1 cup plus 1 tbsp of water (17 1/2 tbsp water total). Fold in 3 tbsp of the chocolate chips.
  2. Coat a nonstick griddle or large nonstick skillet with cooking spray and heat over medium. Scoop the pancake batter by ¼ cupfuls onto the griddle or pan to make 8 pancakes (cook in batches, if necessary). Cook until lightly browned and cooked through, 3 to 4 minutes per side. Sprinkle with the remaining chocolate chips.
  3. Serving size: 2 pancakes and ¾ tsp chocolate chips
