Chopsticks are optional for this lightened-up Chinese favourite. For a burst of colour, toss in any leftover veggies you have in the fridge.

Ingredients

Cooking spray

2 spray(s), (5 one-second sprays per serving)

Egg whites

4 serving(s), large

Uncooked scallions

½ cup(s), chopped, green and white parts

Garlic

2 clove(s), large, minced

Uncooked boneless skinless chicken breast

12 oz, diced

Carrots

½ cup(s), diced

Cooked long grain brown rice

2 cup(s), regular or instant, kept hot

Frozen green peas

½ cup(s), thawed

Low sodium soy sauce

3 tbsp(s)

Instructions

  1. Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add egg whites and cook, until scrambled, stirring frequently, about 3 to 5 minutes. Remove from pan and set aside.
  2. Recoat skillet with cooking spray and return to heat. Add scallions and garlic and sauté 2 minutes. Add chicken and carrots and sauté until chicken is golden brown and cooked through, stirring frequently, about 5 minutes.
  3. Stir in reserved egg whites, cooked brown rice, peas and soy sauce; cook until heated through, about 1 minute. Yields about 1 cup per serving.
