This classic salad makes excellent use of leftover chicken, hard-boiled egg, and bacon. Though the recipe makes one serving, you can easily multiply the ingredients for a batch of meal-prepped lunches to get you through the week. Simply store the dressing in a separate cup so the lettuce doesn’t wilt.

Ingredients

Romaine lettuce

2 cup(s), chopped

Grape tomatoes

½ cup(s), chopped

Reduced fat crumbled blue cheese

2 tbsp(s)

Cooked skinless boneless chicken breast

3 oz, sliced

Cooked crisp center cut bacon

2 slice(s), chopped

Hard boiled egg

1 large, quartered

Reduced fat ranch dressing

2 tbsp(s), (light variety)

Instructions

  1. Arrange the lettuce in a shallow bowl; top with the tomatoes, blue cheese, chicken, bacon, and egg. Serve with the dressing.
