Riced broccoli makes for a versatile side dish that will go with pretty much anything. We give ours a super-cheesy flavour while keeping it vegan. The secret is nutritional yeast, which lends an undeniably cheesy taste. If you’ve never bought it before, look for it in large “shake cans” with the seasonings or near the active dry yeast in your supermarket. It’s also great in vegan pasta dishes, in salad dressings, and on popcorn. We give instructions for making your own broccoli rice, but you can also use pre-prepared riced broccoli.
