No need to heat up the oven for these single-serving nachos. The microwave works perfectly well to melt the cheese and warm the beans—and gets the job done in a fraction of the time for a speedy and craveworthy meal. But you can also toast them in the oven, if you prefer.

Romaine lettuce

Arrange the chips on a microwave-safe plate. Top the chips with the cheese, beans, and scallion. Microwave on high until the cheese melts, 45 seconds to 1 minute. Top the nachos with the lettuce and tomatoes. Serve with the vegetable sticks and pico de gallo.
