Simply seasoned lean ground beef and American cheese get tucked inside tortillas, which are rolled up and air-fried until alluringly crisp. If your air fryer basket won’t hold the taquitos, or if you don’t have an air fryer, you can cook these in the oven at 425°F for 10 to 15 minutes.

Ingredients
Cooking spray
5 spray(s)
Uncooked extra lean ground beef 96 % lean 4% fat
1 pound(s)
Garlic powder
1 tsp(s)
Table salt
½ tsp(s)
Low-carb, high-fiber tortilla wraps
8 tortilla(s)
Reduced fat American cheese slices
4 slice(s)
Plain fat free Greek yogurt
¼ cup(s)
Ketchup
1 tbsp(s)
Chopped dill pickles
1 tbsp(s)
Mustard
1 tsp(s)
Lettuce
½ cup(s), chopped, shredded
Tomato
¼ cup(s), finely chopped
Instructions
1
Preheat an air fryer, if necessary, to 400°F. In a medium bowl, combine the beef, garlic powder, and salt. Divide the beef mixture into 8 equal portions; spread each portion in a thin layer over half of each tortilla. Arrange ½ cheese slice on each tortilla, over the beef; roll up the tortillas. Arrange the taquitos in a single layer in an air fryer basket. Coat the taquitos with cooking spray. Air-fry until the tortillas are browned and the beef is cooked through, 10 to 12 minutes, turning over after 6 minutes.

Meanwhile, in a small bowl, stir together the yogurt, ketchup, pickle, and mustard. Arrange the taquitos on a platter. Spoon the sauce over the middle of the taquitos; top with the lettuce and tomato.
