Ingredients

Fresh basil

3 oz

Fresh parsley

¼ cup(s)

Garlic

3 clove(s), large

Fresh lemon juice

1½ tbsp(s)

Olive oil

2 tbsp(s)

4% regular cottage cheese

16 oz

Table salt

½ tsp(s)

Black pepper

Instructions

  1. Add the basil, parsley, garlic cloves, and lemon juice to the bowl of a food processor and pulse until somewhat smooth (like a coarse pesto).
  2. Stream in the olive oil while the processor runs until combined.
  3. Add the cottage cheese to the food processor and pulse again until smooth and fully combined.
  4. Season with salt and pepper, and adjust seasonings as necessary.
  5. Serving size: a rounded 1/3 cup
