Avocado-Bean Guacamole

No one will ever suspect that white beans replace some of the avocado. Serve this flavourful dip with baked tortilla chips and cut-up vegetables.


Ingredients
Red onion
½ cup(s), sliced, minced
Fresh lime juice
3 tbsp(s)
Canned white beans
15 oz, rinsed and drained
Avocado
1 medium, peeled and chopped
Plum tomato
¼ cup(s), finely diced
Cilantro
2 tbsp(s), chopped
Garlic clove
1 clove(s), medium
Table salt
½ tsp(s)
Hot pepper sauce
½ tsp(s)
Cumin seeds
¼ tsp(s)
Instructions

In a small bowl, combine onion and lime juice; let stand 15 minutes.

In a food processor, puree beans and avocado. Add the tomato, cilantro, garlic, salt, pepper sauce, cumin and the onion mixture, pulse until blended. Transfer to a serving dish and refrigerate, covered, until ready to serve.
