1 medium, large, flesh removed and cut into chunks

firm tofu

vegetable broth

Italian salad dressing

grated Parmesan cheese

fresh mixed greens

Heat oil in a non-stick pan over medium-high heat. Add ginger onion and sauté five minutes, or until tender. Add squash, tofu and broth. Season to taste and cook, stirring occasionally. Serve with salad tossed with dressing and Parmesan cheese.
