Heat oil in a nonstick pan over medium-high heat. Add onion and peppers and sauté. Add beef, season to taste and sauté until desired tenderness. Spread tortilla with black bean dip and top with beef mixture. Top with tomatoes and roll. Enjoy with salad tossed with dressing.
