Refried bean & cheddar snacking quesadilla

We keep things simple in this warm, hearty snack, filling the quesadilla with canned refried beans, cheese, and scallions. Feel free to boost the flavour with diced jalapeños and/or hot sauce.

8" low carb flour tortilla

Fat free refried beans
¼ cup(s)
Reduced-fat cheddar cheese
2½ tbsp(s), shredded
Scallions
1 tbsp(s), sliced
Gluten free fat-free salsa
2 tbsp(s)
Instructions

Heat a medium nonstick skillet over medium. Coat one side of the tortilla with cooking spray. Flip the tortilla over, cooking spray side down. Spread the beans over one half of the tortilla; top with the cheese and scallions. Fold the tortilla in half and place in the skillet. Cook until the tortilla is toasted and the cheese is melted, 2 to 3 minutes per side. Cut the quesadilla into wedges; serve with the salsa.
