Zucchini spirals with avocado and haloumi

2 tbs, shredded, plus extra leaves to serve

White wine vinegar
20 g, (¼ cup)
180 g, cut into 12 slices
- Use a spiraliser to prepare zucchini and toss with basil. Blend or process avocado with vinegar and 2 tbs water. Season with salt and pepper.
- Heat 2 tsp olive oil in a medium non-stick frying pan over medium-high heat. Cook breadcrumbs, stirring, for 2-3 minutes or until golden brown and crisp. Transfer to a plate.
- Heat remaining oil in same pan. Cut haloumi into 12 slices. Cook, in batches, for 1 minute each side or until golden.
- Toss zucchini with avocado. Top with haloumi and breadcrumbs. Serve sprinkled with extra basil leaves.
