Ingredients

Extra lean beef mince, raw

500 g

Onion

1 medium, finely chopped

Garlic

1 clove(s), crushed

Canned diced tomatoes

400 g, (1 x 400g can)

Tomato passata

450 g

Tomato paste

1½ tbs

Dried herbs

1 tsp, mixed variety

Beef stock cube

1 individual, gluten-free vairety

Zucchini

3 medium, spiralised (see tip)

Fresh basil

1 tbs, small leaves, to serve

Oil spray

2 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick saucepan with oil and heat over medium heat. Add mince, onion and garlic and cook, breaking up any lumps, for 5 minutes or until mince is browned and onion is softened.
  2. Add tomatoes, passata, tomato paste and mixed herbs to pan, stir well and bring to the boil. Crumble in stock cube and stir again. Reduce heat and simmer, stirring occasionally, for 15–20 minutes or until sauce has thickened.
  3. When sauce is nearly ready, lightly spray a large frying pan with oil and heat over medium heat. Add zucchini and cook, stirring, for 1–2 minutes or until slightly softened. Season to taste, divide among plates and top with sauce. Garnish with basil.
