Wholegrain toast with avocado and tomato salsa

Toast up a new brekkie staple. Trade boring spreads for super-fresh tomato salsa with crumbly feta

Ingredients

Tomato(es)

1 medium, chopped

Fresh coriander

1 tbs

Lime juice

1 tsp

Wholegrain bread

4 slice(s), (4x35g). toasted

Avocado

½ medium, sliced

Feta cheese

20 g, (goat feta), crumbled

Instructions

  1. To make the salsa, place tomatoes, fresh coriander leaves and lime juice in a small bowl, mixing to combine. Season well with salt and freshly ground black pepper.
  2. Place two slices of wholegrain toast onto each serving plate. Top each slice with equal portions of avocado, tomato salsa and crumbled cheese. Serve immediately.

Notes

TIP: To tell if an avocado is ripe or not, gently squeeze the tip. It should yield to the pressure, but not be too soft or firm. Also, the stem should pull out easily.
