Watermelon with walnut and feta salsa

Refreshing and fun, this unconventional salad combines the flavours of juicy fresh watermelon with tasty feta and crunchy walnuts. This one is sure to impress!
450 g, seedless variety
Reduced fat feta cheese
100 g, crumbled
2 tbs, finely chopped
⅓ cup(s), (35g), finely chopped
20 g, (1tbs, finely chopped)
- Cut watermelon into ten 1cm-thick wedges. Arrange on a serving platter.
- Combine feta, mint, walnuts, oil and onion in a small bowl. Sprinkle feta mixture over watermelon. Season with pepper to serve.
TIP: You can use unsalted pistachio kernels instead of walnuts.
