Warm smoked salmon and white bean salad

This 10 minute meal will not disappoint! It’s flavour packed with plenty of vegies, basil and hot smoked salmon.

Ingredients

Green string beans

400 g, trimmed

Olive oil

1 tbs

Lemon juice

2 tbs

Hot smoked salmon

185 g, flaked

Canned cannellini beans, rinsed, drained

1 400g can, (1x400g can)

Tomato(es)

3 medium, coarsely chopped

Red onion

¼ medium, sliced

Fresh basil

cup(s), leaves

Salted anchovies in oil, drained

8 medium

Instructions

  1. Bring a medium saucepan of water to the boil. Add beans and cook for 2 minutes. Drain. Transfer to a large bowl.
  2. Combine oil and lemon juice in a small bowl.
  3. Place salmon and cannellini beans in a medium frying pan over medium heat. Toss gently to heat through.
  4. Add to green beans with tomatoes, red onion, basil, anchovy and lemon dressing. Season with salt and pepper and gently toss to coat.

Notes

TIP: This recipe uses hot smoked salmon fillet, not cold smoked slices.
