Warm pesto and haloumi pasta salad

A creamy pesto dressing makes this warm salad an instant 'comfort' meal for all seasons.
240 g, (penne)
150 g, thinly sliced
4 individual, thinly sliced
1 large, thinly sliced
¼ cup(s), (65g)
Light sour cream
1 x 3 second spray(s)
- Cook pasta in a large saucepan of boiling salted water, following packet instructions, until just tender. Drain.
- Meanwhile, lightly spray a large non-stick frying pan with oil and heat over high heat. Cook haloumi for 1 minute each side or until golden.
- Place pasta in a large bowl. Add shallots, capsicum and rocket. Toss to combine. Combine pesto, sour cream and juice in a small bowl. Add to salad and toss to combine. Divide among serving bowls and top with haloumi. Season with freshly ground black pepper. Serve.
