Ingredients
Canned black beans, rinsed, drained
2 400g can, (2 x 400g cans)
Egg(s)
3 medium
Golden syrup
1 tbs
Cocoa powder
¼ cup(s)
Ground ginger
1 tbs
Natural sweetener
¼ cup(s), (55g)
Vanilla essence
1 tbs
Baking powder
1 tsp
Shredded or desiccated coconut
1 tbs, (desiccated)

Preheat oven to 180°C.

Process all ingredients in a food processor until smooth. Pour cake batter evenly among an 8 hole x ⅔ cup (150ml) capacity triangle silicone loaf tray. Bake for 25-30 minutes, until a skewer inserted into the centre of cakes comes out clean. Stand in moulds until completely cooled. Carefully remove cakes from moulds, then sprinkle with coconut to serve.
