Veggie and scrambled egg mug

Asparagus, canned in brine, drained
⅓ cup(s), finely chopped, (65g), chopped
Grated parmesan cheese
½ medium, roma variety, chopped
1 tbs, chopped
- Whisk egg and egg white and in a 300ml-capacity microwave-safe mug. Add asparagus and season with salt and pepper.
- Microwave on High (100%) for 45 seconds. Remove from microwave. Stir and sprinkle over parmesan. Microwave for a further 15 seconds or until eggs are set but still creamy. Sprinkle with tomato and shallot to serve.
