A simple and filling salad for those who enjoy a plant-based meat replacement. You’ll find a variety of flavours of vegan sausages at your local supermarket.

Ingredients

Cooked quinoa

½ cup(s), cooled, (100g)

Vegetarian or vegan sausage

4 small, cooked, sliced, (4 x 50g sausages)

Lebanese cucumber

1 large, chopped

Tomato(es)

125 g, (grape variety), halved

Green shallot(s)

2 individual, thinly sliced

Olive oil

2 tsp

Lemon juice

1 tsp

Baby spinach

1 cup(s), (20g)

Instructions

  1. Place quinoa, sausages, cucumber, tomatoes, shallots, oil and lemon juice in a large bowl. Season with salt and pepper. Toss to combine.
  2. Divide spinach between 2 reusable containers. Top with quinoa mixture.
