Just because you are eating alone doesn't have to mean you have to miss out on great-tasting meals. Whip up a delicious gourmet solo dinner!

Ingredients

Reduced fat oil spread

2 tsp

Green apple, unpeeled

½ small, finely chopped

Green shallot(s)

1 individual, thinly sliced

Fresh dates

1 individual, finely chopped

Veal cutlet or chop, raw

190 g, fat trimmed

Vegetable mix, non-starchy, frozen

150 g, broccoli, cauliflower and carrot

Instructions

  1. Melt spread in a small non-stick frying pan over medium-high heat. Add apple and shallot and cook, stirring, for 3–4 minutes. Add date and cook, stirring, for 1 minute. Remove mixture from pan and set aside to cool for 5 minutes.
  2. Cut veal horizontally, three-quarters of the way through. Open up and place apple and date mixture on one side, then fold down other side to enclose. Secure with kitchen string. Heat a chargrill pan over medium-high heat and cook for 5 minutes each side. Serve veal with vegetables.

Notes

SERVING SUGGESTION: Add steamed baby (chat) potatoes.
