Vanilla pancakes with banana and yoghurt

White self-raising flour

Bicarbonate of soda
99% fat-free vanilla yoghurt, sweetened
1 medium, sliced, to serve
1 x 3 second spray(s)
- Sift the flour and bicarbonate into a large bowl. Whisk 1 cup of Soleil Vanilla Yoghurt, the egg and milk in a small bowl until smooth. Stir the yoghurt mixture into the dry ingredients until combined.
- Lightly spray a large non-stick frying pan with oil and heat over medium heat. Spoon 2 level tablespoons of batter into pan and cook for 2-3 minutes each side or until golden and puffed. Cook remaining batter to make 12 pancakes.
- To serve, stack the pancakes and top with a dollop of remaining yoghurt and sliced banana.
SERVING SUGGESTION: Drizzle of maple syrup
