Vanilla pancakes with banana and yoghurt

Ingredients

White self-raising flour

1 cup(s), (150g)

Bicarbonate of soda

½ tsp

99% fat-free vanilla yoghurt, sweetened

1 cup(s)

Egg(s)

1 medium

Skim milk

2 tbs

Banana

1 medium, sliced, to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. Sift the flour and bicarbonate into a large bowl. Whisk 1 cup of Soleil Vanilla Yoghurt, the egg and milk in a small bowl until smooth. Stir the yoghurt mixture into the dry ingredients until combined.
  2. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Spoon 2 level tablespoons of batter into pan and cook for 2-3 minutes each side or until golden and puffed. Cook remaining batter to make 12 pancakes.
  3. To serve, stack the pancakes and top with a dollop of remaining yoghurt and sliced banana.
