Turkey meatball salad
Turkey breast mince
500 g, (see notes)
1 tsp, Italian variety
Four bean mix, canned, rinsed and drained
1 can(s), 400g size can, (1 x 400g can)
200 g, leaves
Roasted capsicum, not in oil
1 cup(s), (145g) drained, sliced
Baby capers, rinsed, drained
- Preheat grill on high. Line a baking tray with foil. Combine mince and dried herbs in large bowl. Season with salt and pepper. Using wet hands, roll mixture into 20 balls. Place balls on prepared tray and grill, 5cm from heat source, for 8 minutes or until golden and cooked through.
- Meanwhile, combine beans, rocket, capsicum, capers and vinegar in a large bowl.
- Add meatballs to salad and toss to combine. Serve.
