Turkey and fennel salad

A simple turkey salad enhanced with the flavours of fresh mint, olives and baby fennel.


Ingredients
Skinless turkey breast
360 g, (Buy 400g), sliced
Fennel
2 baby, thinly sliced
Cos lettuce
100 g, (or mixed leaves)
Pitted green olives
110 g, pitted
Red onion
1 small, thinly sliced
Fresh mint
⅓ cup(s)
Lemon juice
⅓ cup(s), (80ml)
Olive oil

Half-fill a large saucepan with cold water and bring to a simmer over medium heat. Add turkey and reduce heat to low. Simmer, covered, for 5 minutes or until the turkey is cooked through. Transfer to a plate. Set aside to cool.

Shred turkey and place in a large bowl with fennel, lettuce, olives, onion and mint. Toss gently to combine. Combine juice and oil in a small jug. Serve salad drizzled with dressing.
